Following the season we source peaches, plums, and apricots when in season, flash freeze them if it’s a bumper harvest so we can continue production during the offseason. Using vegan pectin made from ground citrus peel, and organic cane sugar we create a product with the lowest possible sugar content that lets the fruit speak for itself. Nana refers to the owner’s (Amanda) grandmother, a delightfully short, determined Welsh woman who perfected her jam making skills in central Pennsylvania. Locally there was an abundance of fruit and this recipe was born. Amanda has enhanced the recipe using Madagascar vanilla beans that bring a depth to the tart apricots, sweet peaches, and vivacious plums. A softer and looser texture, compared to a more traditional jam or jelly, this preserve is ideal addition to slow cooked chicken with vegetables, or as a spread for your PB&J.
